‘Blue Foods’ and innovation in aquaculture: the pillars of the Aquasur 2026 international congress

The largest aquaculture industry fair in the southern hemisphere will also feature a series of talks between experts and key players in the ecosystem on the latest global trends in the sector.

From March 24 to 26, 2026, the thirteenth edition of Aquasur will take place in the Los Lagos Region, Chile. The exhibition is considered the main meeting point in the southern hemisphere for companies dedicated to aquaculture and related products.

The event organizers, FISA, part of the French group GL events, have high expectations for this edition. Among the new features announced are the choice of a new 80,000-square-meter venue and the creation of an ambitious mobility plan to facilitate visitor access and exit.

In addition, the program includes an international conference to be held in parallel with the exhibition. The topics to be addressed are: blue foods and innovation in the production of quality protein from salmon farming; and accelerating the sustainable growth of global aquaculture.

On its opening day, the conference will feature a panel on the Global Salmon Initiative (GSI), led by managers from global salmon production companies committed to driving continuous improvements in salmon farming worldwide. The Happy Salmon Awards ceremony is also scheduled for the same day.

Meanwhile, Wednesday, the 25th, will begin with the panel “Innovation for change from food to final product,” which will be presented by the mayor of Puerto Montt, Rodrigo Wainraight, and will be composed of national and international experts from the aquaculture industry. This will be followed by the panel “Human Health Benefits of Salmon Consumption,” with representatives from the U.S. Food and Drug Administration (FDA).

Other discussions that will take place during this day are related to new approaches to animal welfare in aquaculture and perspectives on the application of gene editing in the global aquaculture industry.

Meanwhile, on Thursday 26, talks are planned on innovation for sustainability in aquaculture, biotechnological solutions for sustainability in the sector, and the use of disruptive technologies for sustainable aquaculture production.

Rodrigo Bastidas, manager of the fair, said that “there is great enthusiasm for this congress. At FISA, at each of our fairs, we provide a space for relevant debates in the productive sectors. Aquasur 2026 will be no exception.”

He added that “we are working to bring together key experts from the aquaculture industry and thus position Chile not only as a favorable location for its material development but also as a hub for generating ideas and innovation that will take us one step further.”
